Sunny Superfood Salad

I have some food combos that I can't live without- chocolate and peanut butter; tomatoes, mozzarella and basil; eggs and salad. If you haven't tried a fried egg on a salad before, your life is about to change forever!

This salad is perfect for when you need a sunny meal filled with vitamins, nutrients, antioxidants, and superfoods! It has the fresh crunch of greens paired with the buttery, nourishing taste of eggs and a creamy dressing. The perfect lunch treat that will give you energy and satisfy your hunger.

Sunny Superfood Salad


  • 2 handfuls of favorite greens

  • 1 carrot, shredded using a cheese grater

  • 1/4 avocado, diced

  • 1/8 cup walnuts

  • Nooch Dressing

  • 1 teaspoon coconut oil

  • 1-2 eggs


Preheat oven to 350 degrees.

Add greens, carrots, and avocado to a bowl.

When the oven is heated, place the walnuts on a baking sheet and bake for 3-5 minutes. Set a timer!

Add walnuts and dressing to the greens bowl and mix.

Heat a small pan with coconut oil over medium-low heat. When the oil is liquified, crack eggs into pan and cook until desired consistency is reached, flipping if you want both sides cooked. Sprinkle with salt and pepper.

Top greens with eggs and enjoy!

*Meal Prepping Tip- This salad is great to meal prep for lunches each day. Portion out containers with the greens, carrots, avocado, hard boiled eggs and a small container with the dressing. Add the dressing right before you eat. Hard boiled eggs should be used instead of fried eggs as they keep longer.
